Cucumber, Jicama, and Pickled Ginger Salad

Instructions

  1. Whisk together the vinegar, sugar and salt until the sugar is dissolved, then add the oil in a slow stream, whisking until emulsified.
  2. Toss the cucumber, jicama, ginger into the dressing, then let stand 15 minutes.
  3. Plate and serve chilled.
