Cucumber, Jicama, and Pickled Ginger Salad

Ingredients
- 2 t white wine vinegar
- 1/2 t sugar
- 1/4 t salt
- 2 T olive oil
- 1 ea seedless cucumber, cored and cut into matchsticks
- 1/2 lb jicama, peeled and cut into matchsticks
- 2 T pickled ginger, finely chopped
Instructions
- Whisk together the vinegar, sugar and salt until the sugar is dissolved, then add the oil in a slow stream, whisking until emulsified.
- Toss the cucumber, jicama, ginger into the dressing, then let stand 15 minutes.
- Plate and serve chilled.
